Molino “El Pujol”

In April 2018, Molino “El Pujol” opened its doors to the public on General Benjamín Hill Street, in the Condesa neighborhood. In addition to supplying masa to the restaurants of Grupo Olvera, this place offers visitors products derived from corn—a cereal essential to Mexican culture since pre-Columbian times: tortillas, tamales, atole, champurrado, tacos, elotes, esquites, and quesadillas, among other foods and drinks. 

The molino sources heirloom corn from various regions of the country, depending on the season. One of the core principles of the project is to establish responsible trade agreements with farmers, with whom it maintains a close and collaborative relationship.
