Since the opening of Pujol 24 years ago, Enrique Olvera's work has continuously explored, disseminated, and celebrated Mexican gastronomy; his legacy has attracted international attention to Mexico City as a gastronomic tourist destination. Through the different restaurants he leads, he has also served as a mentor and role model for a new generation of chefs.
